I remember growing up eating leftovers from the dinner the night before was the "worst" dinner meal we were going to have to eat all week.....now in all the latest magazines "Cosmo" "Real Simple" "Rachael Ray" have recipes about how to take last night's meal into the next night's "leftover masterpieces".......I have tried and tried to trick myself that my leftovers are going to turn into yummy masterpieces.....but if the initial meal is simple and plain how can you magically turn it into a masterpiece?
Here is my attempt at a "leftover masterpiece."
Leftovers from Monday night.....Korean beef ribs, veggies (frozen steamed), and mac&cheese........they weren't a masterpiece to begin with so here is my attempt to "spice" them up!
Added a little A1 steak sauce dashed on top of the beef ribs.......took a "broccoli and cheese veggies for 1" and microwaved it poured it in a bowl, added 1 laughing cow wedge and 1/2 cup of soy milk (whisked) and microwaved for a bowl of a hungry girl "semi-homemade" broccoli and cheese soup.....b/c what masterpiece dinner isn't complete with out a soup course? :) For a Wednesday night "leftover dinner" I pretended for a brief moment that I created a "real simple" leftover masterpiece (homemade broccoli and cheese soup, beef ribs (with A1 steak sauce) and I think for that brief moment I did create a masterpiece :) ....and I saved money by not going to get take-out.
Would I continue to enjoy eating leftovers every other night for the rest of my life.....in the words of Rachel Zoe "unclear" :)
